✨ Ingredients
For the Brownie Layer:
170g melted unsalted butter 75g dark brown sugar 75g granulated sugar 3 large eggs 30g unsweetened cocoa powder 100g all-purpose flour 1 tsp salt Optional: 50g melted dark chocolate for extra richness
For the Cookie Dough Layer:
90g melted unsalted butter 1/3 cup dark brown sugar 1/4 cup granulated sugar 1 large egg 1 tsp vanilla extract 1 cup all-purpose flour 1 tbsp cornflour (cornstarch) 1/2 tsp baking soda 1/4 tsp salt 1/2 cup dark chocolate chips
🧁 Instructions
Step 1: Prepare the Pan
Preheat your oven to 350°F (175°C).
Grease and line an 8×8 inch baking pan with parchment paper.
Leave some overhang on the sides to easily lift the brookies out later.
Step 2: Make the Brownie Batter
In a large bowl, whisk together melted butter, dark brown sugar, and granulated sugar until well combined.
Add in the eggs, whisking vigorously until light and fluffy.
(Optional) Stir in melted dark chocolate for extra fudginess.
Sift in the cocoa powder, flour, and salt.
Fold gently until just combined.
Spread the brownie batter evenly into the prepared pan. Set aside.
Step 3: Make the Cookie Dough
In another bowl, whisk melted butter with dark brown sugar and granulated sugar.
Add the egg and vanilla extract.
Whisk until smooth.
Add in the flour, cornflour, baking soda, and salt.
Mix until no dry streaks remain.
Fold in the chocolate chips.
Step 4: Assemble the Brookies
Use a 1.5 tablespoon cookie scoop or two spoons to dollop chunks of cookie dough over the brownie batter. Gently press the cookie dough down into the brownie batter without fully spreading it.
Step 5: Bake
Bake in the centre of your preheated oven for 25 minutes. Remove the pan, close the oven door, and bang the pan firmly on your counter 5–6 times.
This helps flatten the centre for an even texture. Return to the oven and bake for another 8–12 minutes, or until the cookie top is golden brown and set.
Step 6: Cool & Serve
Let the brookies cool completely in the pan.
Lift out using the parchment, slice into squares. Optional: Sprinkle with flaky sea salt before serving.
