No-Bake Dubai Cheesecake with Pistachio Cream & Kadayif Crunch

🍰 Ingredients

For the Base Layer:

1 pack crème-filled cookies (Oreos or similar) 4 tbsp melted butter

For the Kadayif Crunch:

3 cups shredded kadayif (or kunafa dough) 3 tbsp unsalted butter ½ jar pistachio cream

For the Ganache:

1 cup heavy cream 200g dark chocolate, chopped

For the Cheesecake Layer:

540g cream cheese, softened ½ cup granulated sugar 1 tsp vanilla extract ½ tsp salt Remaining ½ jar of pistachio cream 1 cup heavy cream (whipped to stiff peaks)

To Garnish:

Remaining ganache Chopped pistachios Melted pistachio cream (optional)

👩‍🍳 Instructions

1. Make the Cookie Crust:

Crush crème cookies into fine crumbs. Mix with 4 tbsp melted butter until the texture resembles wet sand. Press into the base of a springform pan and freeze for 10 minutes.

2. Prepare the Kadayif Layer:

Toast 3 cups kadayif with 3 tbsp butter in a pan over medium heat until crispy and golden. Remove from heat and stir in ½ jar pistachio cream. Spread this over the chilled cookie crust and freeze again for 10 minutes.

3. Chocolate Ganache Layer:

Microwave 1 cup cream + 200g chopped dark chocolate in short bursts, stirring until glossy and smooth. Pour half the ganache over the kadayif layer. Freeze until firm.

4. Cheesecake Filling:

In a large bowl, whisk cream cheese, sugar, vanilla, and salt until smooth (4-5 mins). Add the remaining pistachio cream and mix gently until incorporated (don’t overbeat). In a separate bowl, whip 1 cup heavy cream until stiff peaks form. Gently fold whipped cream into the pistachio cream cheese mixture.

5. Layer It Up:

Spread the cream cheese mixture over the set ganache layer. Cover and refrigerate for at least 4–6 hours, or overnight for best results.

6. Final Touch:

Once the cheesecake is fully set, remove from the pan. Pour remaining ganache on top and decorate with chopped pistachios and a drizzle of pistachio cream.
