There’s something truly nostalgic about a bowl of Kadhi Pakora — the creamy, tangy yogurt base, soft gram flour dumplings (pakoras), and that unmistakable aromatic tarka sizzling on top. This dish is a staple in many South Asian homes, especially on rainy days or lazy weekends when comfort food is the only answer.
In this recipe, I walk you through how to make authentic halal kadhi pakora from scratch – including a smooth yogurt and besan kadhi, perfectly spiced pakoras, and a sizzling tempering of garlic, cumin, curry leaves, and dried chillies. It’s rich, flavourful, and incredibly satisfying with a side of fluffy basmati rice.
Whether you grew up eating kadhi or you’re discovering it for the first time, this recipe brings together warmth, tradition, and bold desi flavours in every bite.

🥣 Ingredients for Kadhi:
Yogurt – 500g Gram flour (besan) – ½ cup (sifted) Salt – to taste Ginger-garlic paste – 1 tbsp Red chilli powder – 1 tsp Turmeric powder – ½ tsp Whole coriander seeds – 1 tbsp Onion – 1, finely sliced Green chillies – to taste Curry leaves – a few Water – 4 cups
🔪 Method – Kadhi Base:
In a large bowl, mix sifted gram flour with yogurt until smooth. Add salt, red chilli powder, turmeric, whole coriander seeds, and ginger-garlic paste. Pour in 4 cups of water and mix well. Transfer to a large pot and bring to a boil, stirring continuously. Once it starts bubbling, reduce heat and simmer for 15 minutes. Add sliced onion, green chillies, and curry leaves. Let the kadhi cook gently on low heat for 1.5 hours, stirring occasionally to prevent sticking.
🫓 Ingredients for Pakora (Dumplings):
Gram flour – 1 cup Salt – to taste Baking soda – ½ tsp Cumin seeds – ½ tsp Chaat masala – ½ tsp Onion – 1, finely sliced Green chillies – chopped, to taste Water – as needed (to make a thick paste)
🍳 Method – Pakora:
In a bowl, mix gram flour with all other pakora ingredients. Gradually add water to form a thick, lump-free batter.
Cover and let it rest in a warm place for 30 minutes. Heat oil in a deep pan and fry spoonfuls of the batter until golden brown and crisp. Drain on paper towels and set aside.
🌶️ Ingredients for Tarka:
Cumin seeds – 1 tsp Fenugreek seeds – ¼ tsp Garlic cloves – 4–6, thinly sliced Whole red chillies – 6 Curry leaves – a few Oil – for tempering
🔥 Method – Tarka & Final Assembly:
Once kadhi has simmered well, gently add in the fried pakoras. In a small pan, heat oil and add cumin seeds, fenugreek seeds, sliced garlic, whole red chillies, and curry leaves.
Let it sizzle for a minute or two until the garlic is golden. Pour this tarka over the kadhi and pakoras. Cover and let it rest for 5–10 minutes before serving.
🍚 To Serve:
Serve hot with steamed basmati rice and a side of your favourite achar or salad.
