Juicy chicken thighs are marinated in a bold blend of garlic, honey, Dijon mustard, paprika, and chilli flakes, then roasted alongside sweet potatoes, broccoli (or Brussels sprouts), and red onions. Everything bakes together on a single tray, creating a deliciously caramelised, sweet-and-spicy dish that’s perfect for busy weeknights—or lazy Sundays.

Whether you’re meal prepping for the week or throwing together a quick dinner, this recipe is easy, adaptable, and absolutely packed with flavour. Serve it straight from the tray with a sprinkle of fresh herbs or a squeeze of lemon for extra zing!

🛒 Ingredients:

4 bone-in, skin-on chicken thighs

3 tbsp olive oil

4 garlic cloves, minced

2 tbsp honey

3 tsp Dijon mustard

2 tsp dried thyme

1 tsp paprika

1 tsp chilli flakes (adjust to your spice preference)

2 medium sweet potatoes, peeled and cubed

1 lb broccoli florets (or Brussels sprouts)

1 red onion, sliced into wedges

Salt and freshly cracked black pepper, to taste

🔪 Method:

Season the Chicken: Place the chicken thighs in a large bowl. Season generously with salt and pepper, rubbing it well into the meat.

Add the Veggies: Add the cubed sweet potatoes, broccoli (or Brussels sprouts), and red onion to the bowl. Season the veggies with salt and pepper. Toss everything together gently.

Make the Marinade: In a separate bowl, whisk together the olive oil, minced garlic, honey, Dijon mustard, dried thyme, paprika, and chilli flakes.

Marinate: Pour the marinade over the chicken and vegetables. Mix well to coat everything evenly. Cover and let marinate for at least 30 minutes, or ideally overnight in the fridge for deeper flavour.
