Ingredients

    For the chicken
  • 500g chicken breast
  • 2 tbsp butter
  • ½ tsp paprika powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp freshly ground black pepper
  • ½ tsp garam masala
  • ¼ tsp salt
  • For the creamy filling
  • 3 tbsp mayonnaise
  • 2 tbsp Greek yogurt or sour cream
  • ½ tsp Dijon mustard
  • ½ tsp black pepper
  • ¼ tsp white pepper powder
  • 1 small red onion, finely diced
  • ½ cup shredded lettuce
  • 1 small carrot, shredded
  • 2 tbsp fresh coriander or parsley, chopped
  • To serve
  • 8 slices of bread
  • Mayonnaise, for spreading
  • Butter spray, for the pan

Method

  1. Boil the Chicken: Place the chicken breasts in a pan, cover with water and boil until cooked through.
  2. Shred the Chicken: Drain the chicken and add it to a pan with the butter. Break it apart with a wooden spoon until it’s finely shredded.
  3. Season: Add the paprika, garlic powder, onion powder, black pepper, garam masala and salt. Stir well so all the chicken is coated.
  4. Make the Filling: Transfer the shredded chicken to a bowl. Add the mayo, Greek yogurt (or sour cream), Dijon mustard, black pepper and white pepper, then mix well.
  5. Add the Veg: Stir in the red onion, lettuce, carrot and coriander (or parsley).
  6. Assemble: Spread a little mayo on a slice of bread, add a generous layer of the chicken filling and cover with another slice.
  7. Toast: Spray a pan with butter spray and warm the sandwich over a medium heat until golden on both sides. Serve warm. Enjoy!
