For the Chicken Marinade:
700g boneless, skinless chicken thighs (or breasts)
3 tbsp Greek yogurt
2 tbsp olive oil
3 cloves garlic, minced
Juice of 1 lemon
1 1/2 tbsp oregano
1 tsp salt
1/2 tsp black pepper
For the Tzatziki Sauce:
1 cup Greek yogurt
1 small cucumber, grated and drained
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp chopped fresh dill (or mint)
Salt and pepper, to taste
For the Gyros:
Pita bread or flatbreads
Sliced tomatoes
Sliced red onions
Shredded lettuce
Cucumber slices
Instructions
Step 1: Marinate the Chicken
Place the Marinade ingredients in a ziplock bag and massage to mix.
Add the chicken into the ziplock bag and massage to cover all the chicken in the Marinade.
Marinate for at least 2 hours, preferably 3 hours, ideally overnight.
Step 2: Cook the Chicken
Heat a grill pan, skillet, or BBQ over medium-high heat.
Cook the chicken for about 5-6 minutes per side until fully cooked and slightly charred.
Step 3: Make the Tzatziki
Mix the grated cucumber with yogurt, garlic, olive oil, lemon juice, dill, salt, and pepper. Chill until ready to serve.
Step 4: Assemble the Gyros
Warm your pita breads slightly.
