It’s quick, easy, and absolutely packed with flavour — perfect for busy days when you want something delicious without spending hours in the kitchen!

Recipe:

Ingredients:

200g cooked king prawns (peeled and deveined)

1 cup quinoa (cooked in 45 ml water)

1 ripe mango, diced

1 ripe avocado, diced

1 small cucumber, thinly sliced

1/2 cup cherry tomatoes halved

1/4 red onion, thinly sliced

Fresh coriander (optional, for garnish)

For the Dressing:

2 tbsp olive oil

1 tbsp fresh lime juice (or lemon juice)

1 tsp honey

1/2 tsp Dijon mustard (optional, for a little kick)

Salt and pepper, to taste

Instructions:

In a small bowl, whisk together the olive oil, lime juice, honey, mustard, salt, and pepper to create your dressing.

In a large bowl, gently toss together the quinoa, prawns, mango, avocado, cucumber, cherry tomatoes and red onion.

Drizzle the dressing over the salad and toss lightly to coat everything evenly.

Serve immediately, garnished with fresh coriander if you like.
