Nando's Peri Peri Chicken Tray Bake

Juicy peri peri chicken thighs roasted on one tray with sweet potatoes, peppers and onions, finished with blistered cherry tomatoes and cheese.
For the Peri Peri Chicken
- 700 g boneless chicken thighs
- 1 pack Nando’s Peri-Peri seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons olive oil
- Juice of 1 lime
- 2 garlic cloves, minced
For the Tray
- 500 g sweet potatoes, diced into bite-size pieces
- 1 large red pepper, diced
- 2 medium red onions, quartered
- 4 garlic cloves, chopped
- A drizzle of olive oil
- A handful of cherry tomatoes
- Grated parmesan or halloumi, for topping
Method
- Make the Marinade: In a large bowl, whisk together the Nando’s Peri-Peri seasoning, salt, black pepper, olive oil, lime juice and minced garlic.
- Marinate the Chicken: Add the chicken thighs and coat them well in the marinade. Cover and leave to marinate for at least 30 minutes, or ideally overnight in the refrigerator.
- Preheat the Oven: Preheat the oven to 200°C. Line a large baking tray with foil for easy clean-up.
- Prepare the Vegetables: Add the diced sweet potatoes, red pepper, quartered red onions and chopped garlic to the tray. Drizzle with olive oil and toss to coat.
- Add the Chicken: Place the marinated chicken thighs on top of the vegetables.
- Bake: Bake for 30 minutes.
- Add the Tomatoes and Cheese: Take the tray out of the oven, add the cherry tomatoes and sprinkle the parmesan or halloumi over the top.
- Finish Baking: Return to the oven for another 15 minutes, until the chicken is completely cooked through and the sweet potatoes are soft. Serve hot and enjoy!
Tips and Variations
- Marinate the chicken overnight for the deepest flavour.
- Cut the sweet potatoes into similar-sized pieces so that they cook evenly.
- Spread everything out in a single layer. An overcrowded tray will steam rather than roast, so use two trays if needed.
- Choose a mild, medium or hot peri peri seasoning to suit your family’s spice level.
- Serve on its own, or with rice, a fresh salad or warm flatbreads.
Storage
Keep leftover chicken and vegetables covered in the refrigerator for up to 3 days. Reheat thoroughly until piping hot before serving.
Allergy information: Parmesan and halloumi contain milk. Always check the labels of the products you use, including the peri peri seasoning.
