Fluffy rice tossed with tender chicken strips, soft pieces of omelette and crunchy vegetables, this Chicken Masala Rice is seasoned with soy sauce, garam masala and a hint of cloves for a warming, gently spiced twist on fried rice. Everything comes together in one pan.
It’s a great way to turn boiled rice into an easy, filling dinner for the whole family.

Chicken Masala Rice

Fluffy rice tossed with tender chicken strips, omelette pieces and crunchy vegetables, seasoned with soy sauce, garam masala and a hint of cloves.
For the Omelette
- 2 eggs
- Pinch of salt
For the Chicken and Vegetables
- 3 tablespoons oil
- 350 g chicken strips
- 1 carrot, cut into julienne strips
- 3 green chillies, chopped
- ½ cup shredded cabbage (optional)
- ¼ cup green onions, chopped
For the Rice and Seasoning
- 2½ cups rice, boiled
- 1 teaspoon light soy sauce
- 1 teaspoon dark soy sauce
- 1 teaspoon white pepper
- 2 teaspoons garam masala powder
- ½ teaspoon ground cloves
- 1 teaspoon salt, or to taste
- 1 teaspoon MSG
- ¼ teaspoon yellow food colour, mixed with 1 tablespoon water
Method
- Make the Omelette: Whisk the eggs with a pinch of salt. Heat a little of the oil in a large pan or wok, pour in the eggs and cook until set. Remove from the pan, cut into small pieces and set aside.
- Cook the Chicken: Add the remaining oil to the same pan and fry the chicken strips until cooked through.
- Add the Vegetables: Add the carrot and green chillies, along with the cabbage if using, then the green onions. Toss briefly.
- Add the Rice and Spices: Add the boiled rice, followed by the light soy sauce, dark soy sauce, white pepper, garam masala, ground cloves, salt and MSG. Mix gently until the rice is evenly coated.
- Add the Omelette: Fold the omelette pieces through the rice.
- Colour and Steam: Drizzle the food colour and water mixture over the top of the rice. Cover and cook on a low heat for 10 minutes.
- Serve: Serve hot and enjoy.
Tips and Variations
- Rice that has been boiled and cooled holds its shape best and is less likely to break when mixed.
- Drizzle the food colour over the top rather than stirring it in, for a mix of white and golden grains.
- Use fewer green chillies for a milder version.
- The cabbage is optional, and the MSG can be left out if you prefer.
Storage
Cool leftovers quickly, keep covered in the refrigerator and eat within 1 day. Reheat until piping hot all the way through.
