Spicy Thai Mango Salad Recipe
Ingredients:
2 firm mangoes, peeled and julienned
1 red bell pepper , julienned
1/2 yellow and green bell pepper julienned
1 carrot julienned
1 cucumber deseeded and julienned
1–2 bird’s eye chillies, finely chopped (adjust to heat preference)
2 tablespoons roasted peanuts, crushed
A handful of fresh coriander, chopped
A handful of mint leaves (optional)
For the Dressing:
1 1/2 tsp sesame seeds
1 tbsp honey
1 tsp red chili flakes
2 tbsp olive oil
1 tsp balsamic vinegar
2 tsp soy sauce
Instructions:
Prepare the mangoes: Peel and julienne the mangoes. Set them aside in a large mixing bowl.
Make the dressing: Heat olive oil and add the sesame seeds to it. Mix and remove from heat. Put aside to cool it. In a small bowl, add the soya sauce, chilli flakes, honey, vinegar and lastly olive oil/sesame seeds. Mix well
Assemble the salad: Add the bell peppers, carrots, cucumber and chopped herbs to the mango. Pour the dressing over and toss everything together until well combined.
Finish and serve: Sprinkle crushed peanuts on top. Serve immediately as a refreshing starter or side dish.
Tips:
Adjust chilli and sugar to suit your taste balance between heat and sweetness.
