Ingredients:

1 cup cooked quinoa

1/2 can chickpeas (rinsed & drained)

1/2 cucumber (diced)

1/4 cup red onion (finely chopped)

Handful of fresh parsley & mint (chopped)

1/2 cup roasted pistachios or cashews chopped

1/4 cup crumbled feta

Juice of 1 lemon

Drizzle of olive oil

Salt & pepper to taste
