This Mango & Black Bean Salad is a vibrant, refreshing dish that brings together sweet, savoury, and zesty flavours in every bite. It’s packed with colour, texture, and nutrition — perfect as a light lunch, a BBQ side, or a taco topping. Bonus: it’s naturally vegan, gluten-free, and ready in minutes!

Ingredients:

1 can (15 oz) black beans, drained and rinsed

1 ripe mango, diced

1 red bell pepper, chopped

½ red onion, finely chopped

¼ cup fresh cilantro, chopped

2 tbsp lime juice

2 tbsp olive oil

2 tbsp Mango purée

Salt and pepper, to taste

Optional: Avocado slices, for serving

Instructions:

In a large mixing bowl, combine the black beans, mango, red bell pepper, red onion, and cilantro.

In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to make a simple, zesty dressing.

Pour the dressing over the salad and gently toss everything together until well coated along with the mango puree.

Cover and refrigerate for at least 30 minutes to let the flavours come together. Serve chilled, with avocado slices on top if desired.
