Ingredients

185g unsalted butter
185g dark chocolate
85g plain flour
40g cocoa powder
50g milk/white chocolate chunks
3 large eggs
275g golden or white caster sugar

Method

Sift the flour and cocoa powder and put it aside.

Mix sugar and eggs till double in size and fluffy.

Melt butter and dark chocolate in double boiler. (When melting chocolate and butter, you want to start by melting the chocolate alone in a double-boiler, then add the butter and finish mixing.)

While you wait for the chocolate to cool, position a shelf in the middle of your oven and turn the oven on to 180C/ 160C fan/ gas 4.

Pour the chocolate mixture in the egg mousse and fold lightly with a spatula.

Once mixed , add in the flour n cocoa mixture. Gently fold in the mixture. Please don’t rush!

Finally add in the chocolate chunks and then pour the mixture in the prepared square tin.

Put in the oven for 30 mins.

Please let it cool for at least 10 mins once taken out from the oven.

You will have around 16 squares.
